  • 2 cups corn kernels
  • 2 cans black beans, drained and rinsed 15 ounces each
  • 2 cans diced tomatoes with green chilies 10 ounces each
  • 1 packet taco seasoning or 4 tablespoons homemade seasoning
  • 1 teaspoon sea salt
  • 3 cups shredded cheddar cheese
  • 1 teaspoon smoked paprika optional, for a smoky depth
  • 1/2 teaspoon garlic powder optional, for added richness

Method
 

Step 1: Preheat the Oven
  1. Before anything else, preheat your oven to 350°F (175°C). This step is crucial because we want the casserole to bake evenly.
Step 2: Cook the Ground Beef
  1. In a large skillet over medium heat, brown the ground beef. Make sure to break it apart with a spatula. Once it’s no longer pink, drain any excess fat. The beef adds a hearty flavor foundation to the dish.
Step 3: Sauté the Onions
