Ingredients
  

  • 6 flour tortillas 8-inch "burrito-sized"
  • 1 packet (1 ounce) taco seasoning mix such as Old El Paso or your preferred brand
  • 1 lb. ground beef
  • 2/3 cup water or the amount specified on the taco seasoning package
  • 3 cups shredded sharp cheddar cheese or a Mexican-style cheese blend
  • 1 tablespoon lime juice
  • 1/2 teaspoon smoked paprika
  • Optional for garnish: sour cream, guacamole, salsa, diced red onions, sliced green onions

Method
 

Step 1: Cook the Beef
  1. In a medium skillet over medium heat, crumble the ground beef and cook it until it’s browned. This should take around 5 to 7 minutes. Drain any excess fat before continuing.
Step 2: Add Flavor
  1. Stir in the taco seasoning and water. Mix thoroughly. Allow it to simmer for about 5 minutes until the mixture thickens. Your kitchen should smell incredible at this point!
Step 3: Prepare the Tortillas
  1. Take one tortilla and lay it flat. Spoon a generous amount of the beef mixture onto one half of the tortilla.
Step 4: Add Cheese
  1. Sprinkle cheese over the beef. This is the part where you can go heavy or light, depending on your cheese preference. Think melted goodness!
Step 5: Fold and Cook
  1. Fold the tortilla in half, covering the filling. In a clean skillet over medium-high heat, add a small amount of oil or butter. Once hot, place the quesadilla in the pan. Cook for 3-4 minutes until golden brown, then flip and cook the other side for an additional 3-4 minutes.
Step 6: Serve and Enjoy
  1. Once both sides are crisped to perfection, remove the quesadilla from the skillet and let it cool for a minute. Slice it into wedges and serve it with your favorite garnishes.

Notes

  • If you prefer a crispier quesadilla, use a little more oil in the skillet.
  • For a vegetarian version, swap the beef for a mix of beans or sautéed mushrooms.
  • Be careful not to overstuff the quesadillas. Less is more!
  • If you’re making this dish for a crowd, keep cooked quesadillas warm in a low-temperature oven.
  • Experiment with different cheeses. Pepper Jack can add a spicy kick!
