Ingredients
  

  • 4 soft corn tortillas, lightly toasted or charred over an open flame
  • 1/2 teaspoon of olive oil or coconut oil
  • 4 large eggs, lightly beaten
  • A pinch of flaky sea salt
  • 1 cup fresh Salsa Fresca
  • A squeeze of fresh lime juice
  • A small handful of diced red onion
  • 1/4 cup crumbled queso blanco or sharp white cheddar
  • 1/2 ripe avocado, thinly sliced
  • A handful of fresh cilantro leaves, roughly chopped
  • A few dashes of your favorite chili hot sauce

Method
 

Step 1: Toast the Tortillas
  1. Start by heating a skillet over medium heat. Lightly toast your corn tortillas until they are pliable. You want them warm, with a little char, but not crispy.
Step 2: Cook the Eggs
  1. In the same skillet, add olive oil (or coconut oil) and let it heat for about a minute. Pour in the lightly beaten eggs and season with a pinch of flaky sea salt. Stir gently and cook until just set, about two to three minutes.
Step 3: Assemble the Tacos
  1. Now it’s time for the fun part. Take a tortilla and spoon some of the scrambled eggs into the center. Layer on a scoop of fresh salsa, followed by diced red onion and crumbled cheese.
Step 4: Add Avocado and Cilantro
  1. Next, lay down a few slices of ripe avocado and sprinkle a handful of chopped cilantro on top. This adds freshness you won’t want to miss.
Step 5: Finish It Off
  1. Just before serving, drizzle a squeeze of fresh lime juice over the tacos, adding brightness. Don’t forget to top with your favorite chili hot sauce for that extra kick.

Notes

  • Fresh Ingredients Matter: Use the freshest eggs and ripest avocados you can find. It really makes a difference in flavor.
  • Don’t Skip the Salsa: Salsa Fresca adds moisture and flavor. You can easily make your own or buy it fresh from the store.
  • Customize the Spice: Adjust the heat by adding or reducing chili hot sauce or opting for a milder salsa.
  • Experiment with Cheeses: Queso blanco gives a light flavor, but feel free to swap for cotija or even feta for something different.
  • Don’t Overcook the Eggs: Aim for them to be soft and fluffy, not dry. Remove them from heat when they still have a little gloss to avoid overcooking.
