Ingredients

Herb Butter:
  • 1/2 cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons fresh thyme, finely chopped
  • 1 1/2 teaspoons fresh rosemary, finely chopped
  • 1/2 teaspoon fresh sage, finely chopped
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon lemon zest adds a bright, citrusy note
Turkey:
  • 1 whole or half bone-in turkey breast or boneless, if preferred

Method

Step 1: Prepare the Herb Butter
  1. Start by combining the softened butter, minced garlic, chopped herbs, salt, pepper, and lemon zest in a bowl. Use a fork to mix everything until well blended. The fragrance will awaken your senses, making you eager to continue.
Step 2: Prepare the Turkey Breast
  1. Pat the turkey breast dry with paper towels. This step is crucial as it helps the skin become crispy. If you’re using a bone-in turkey, gently lift the skin and spread a portion of the herb butter underneath, alongside the meat itself. Get as much of that butter in there as possible!
Step 3: Apply the Remaining Herb Butter
  1. Rub the remaining herb butter all over the exterior of the turkey breast, ensuring it’s fully coated. This will lead to a beautifully browned exterior.
Step 4: Roast the Turkey
  1. Preheat your oven to 375°F (190°C). Place the turkey breast in a roasting pan, and insert a meat thermometer into the thickest part of the breast. Roast until the internal temperature reaches 165°F (74°C), which usually takes about an hour and a half for a bone-in breast, depending on its size.
Step 5: Baste Occasionally
  1. Every 30 minutes, baste the turkey with the juices that collect in the pan. This helps keep the turkey moist and enhances the flavor.
Step 6: Let it Rest
  1. Once the turkey breast reaches the appropriate temperature, remove it from the oven. Tent it with aluminum foil and let it rest for about 20 minutes. Resting is essential, as it allows the juices to redistribute, ensuring your turkey remains succulent.
Step 7: Carve and Serve
  1. After resting, carve the turkey breast against the grain into slices. Serve immediately with your favorite sides!

Notes

  • Use a Meat Thermometer: This will ensure your turkey reaches the perfect doneness without overcooking.
  • Thawing Matters: If using a frozen turkey, make sure it’s completely thawed. This can take a couple of days in the fridge.
  • Flavor Variations: Feel free to play with the herbs. Oregano, dill, or even a smoky paprika can add unique twists to the flavor profile.
  • Crispy Skin: For an extra crispy skin, increase the oven temperature to 425°F (220°C) for the last 20 minutes of cooking.
  • Drippings are Gold: Don’t discard the drippings. They can be used to create a rich gravy or as a base for sauces.
