Step 1: Prepare the Herb Butter

- Pat the turkey breast dry with paper towels. This step is crucial as it helps the skin become crispy. If you’re using a bone-in turkey, gently lift the skin and spread a portion of the herb butter underneath, alongside the meat itself. Get as much of that butter in there as possible!
Step 3: Apply the Remaining Herb Butter
- Rub the remaining herb butter all over the exterior of the turkey breast, ensuring it’s fully coated. This will lead to a beautifully browned exterior.
Step 4: Roast the Turkey
- Preheat your oven to 375°F (190°C). Place the turkey breast in a roasting pan, and insert a meat thermometer into the thickest part of the breast. Roast until the internal temperature reaches 165°F (74°C), which usually takes about an hour and a half for a bone-in breast, depending on its size.
Step 5: Baste Occasionally
- Every 30 minutes, baste the turkey with the juices that collect in the pan. This helps keep the turkey moist and enhances the flavor.
Step 6: Let it Rest
- Once the turkey breast reaches the appropriate temperature, remove it from the oven. Tent it with aluminum foil and let it rest for about 20 minutes. Resting is essential, as it allows the juices to redistribute, ensuring your turkey remains succulent.

- After resting, carve the turkey breast against the grain into slices. Serve immediately with your favorite sides!
