Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly minced garlic
  • 2 medium-sized onions, finely chopped
  • 1 cup diced celery stalks
  • 2 cups tender, shredded chicken breast
  • 4 cups rich chicken broth
  • 4 cups fluffy cooked rice
  • 2 cups frozen medley of vegetables peas, carrots, corn, and green beans
  • 1 tbsp dried oregano leaves
  • 1 tsp ground thyme
  • ½ tsp sea salt
  • ½ tsp smoked paprika
  • ½ tsp black pepper

Method
 

Step 1: Prepare Your Ingredients
  1. Start by gathering all the ingredients mentioned above. You'll want everything at hand to keep the process flowing smoothly. Chop your onions, celery, and garlic and have your chicken cooked and shredded.
Step 2: Sauté the Base
  1. In a large pot, heat the olive oil over medium heat. Once hot, add the minced garlic and chopped onions. Sauté those onions until they are translucent. About five minutes should do.
Step 3: Add the Celery
  1. Add the diced celery to the pot. Cook it for an additional three minutes, stirring occasionally. The mixture should become fragrant and colorful.
Step 4: Add the Chicken
  1. Toss in the shredded chicken at this stage. Stir it well with the sautéed vegetables. Let it heat through for a couple of minutes.
Step 5: Pour in the Broth
  1. Now, add the chicken broth to the pot. Bring it to a gentle simmer, allowing all the flavors to mingle.
Step 6: Introduce Rice and Veggies
  1. Once your broth is simmering, add the cooked rice and the frozen vegetable medley. Blend it all together. The heat of the soup will warm the frozen vegetables within minutes.
Step 7: Season Your Dish
  1. Sprinkle in the oregano, thyme, sea salt, smoked paprika, and black pepper. Stir everything well, letting the seasoning work its magic. Adjust seasonings to your taste.
Step 8: Final Simmer
  1. Allow everything to simmer for about 5 to 10 minutes, stirring occasionally. This gives time for the flavors to develop and meld beautifully.
