Ingredients

  • 16 ounces frozen pierogies choose your favorite fillings
  • 2 tablespoons olive oil for roasting
  • 1/2 teaspoon garlic powder
  • Kosher salt and pepper to taste
  • 4 tablespoons unsalted butter
  • 2 large sweet onions, thinly sliced for caramelizing
  • 1 to 2 tablespoons balsamic vinegar adds acidity
  • 1/2 teaspoon smoked paprika for depth of flavor
  • Fresh chives or parsley for topping adds freshness
  • For the Chipotle Sour Cream:
2 teaspoons adobo sauce from the can of chipotles
  • 2/3 cup sour cream creamy base
  • 1 diced chipotle pepper for heat

Method

Step 1: Preheat the Oven
  1. First, preheat your oven to 425°F (220°C). This temperature is crucial for getting that perfect golden crispy texture on the pierogies.
Step 2: Prepare the Onions
  1. In a large skillet, melt the butter over medium heat. Add the thinly sliced onions and sprinkle a bit of salt over them. Stir occasionally, allowing the onions to caramelize. This can take around 10-15 minutes. You want them to become soft and golden brown.
Step 3: Season the Pierogies
  1. While the onions are cooking, prepare your frozen pierogies. On a large baking sheet, spread them out in a single layer. Drizzle with olive oil, then sprinkle with garlic powder, salt, pepper, and smoked paprika. Toss them gently with your hands to ensure they are well coated.
Step 4: Roast the Pierogies
  1. Once the onions are caramelized, add them to the baking sheet with the pierogies. Give everything a good mix. Your kitchen should be smelling pretty great at this point! Roast in the oven for about 20-25 minutes, or until the pierogies are golden and crispy. Be sure to flip everything halfway through for even cooking.
Step 5: Make the Chipotle Sour Cream
  1. While the pierogies are roasting, it’s time to whip up the chipotle sour cream. In a small bowl, combine the sour cream, diced chipotle pepper, and adobo sauce. Mix until well combined and adjust the heat according to your taste.
Step 6: Serve and Enjoy
  1. Once the pierogies are crispy and perfectly roasted, take them out of the oven. Garnish with fresh chives or parsley, and serve them hot with the chipotle sour cream drizzled on top or on the side.

Notes

  • Don’t overcrowd the pan: Allow space between the pierogies for even roasting.
  • Experiment with flavors: Try different spices like cumin or Italian seasoning for a unique twist.
  • Add veggies: Toss in some bell peppers or broccoli on the baking sheet for added flavor and nutrition.
  • Brown the onions longer: If you love that deep flavor, let the onions caramelize for a little longer.
  • Serve immediately: These are best eaten fresh out of the oven for maximum taste and texture.
