Ingredients
  

  • 4 cups low-sodium chicken broth
  • 1 can crushed tomatoes, with juices 28-ounce
  • 1 tablespoon extra-virgin olive oil
  • 1/2 yellow onion, finely diced
  • 6 cloves fresh garlic, minced
  • 16 ounces mild or spicy Italian sausage, casings removed if needed
  • 2 tablespoons rich tomato paste
  • 1 tablespoon dried Italian herb blend
  • 1 package refrigerated cheese and spinach ravioli 18-ounce
  • 2 cups chopped fresh baby spinach leaves
  • 1 cup heavy whipping cream
  • 1/4 teaspoon crushed red pepper flakes, optional for subtle heat
  • 1/3 cup grated Parmesan cheese, for a savory finish
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste

Method
 

Step 1: Sauté the Vegetables
  1. Start with a large pot over medium heat. Add the olive oil and let it warm up. Toss in the diced onion and cook until translucent, which should take about 3-4 minutes. Next, stir in the minced garlic. Sauté for another minute until fragrant, but don’t let it brown.
Step 2: Brown the Sausage
  1. Now, add the Italian sausage to the pot. Break it apart with a wooden spoon as it cooks, mixing well with the onion and garlic. Brown the sausage until it’s fully cooked, around 5-7 minutes.
Step 3: Add Tomatoes and Broth
  1. Once the sausage is browned, add in the crushed tomatoes, including their juices. Stir in the tomato paste, dried Italian herb blend, and chicken broth. Allow this mixture to come to a gentle boil, and then reduce the heat, letting it simmer for about 10 minutes.
Step 4: Add Ravioli
  1. After the broth has simmered, it’s time for the star of the show! Add the refrigerated cheese and spinach ravioli to the pot. Stir gently and let it cook as per the package instructions, usually around 3-5 minutes.
Step 5: Stir in Spinach and Cream
  1. Once the ravioli are tender, stir in the fresh spinach. It will wilt quickly, adding a beautiful green color. Carefully pour in the heavy whipping cream, stirring until combined. Adjust seasoning with salt and pepper to taste. If you love a bit of heat, sprinkle in the crushed red pepper flakes.
