Ingredients

  • 8 ounces of high-quality feta cheese block well-drained
  • 3/4 cup thick and creamy Greek-style yogurt
  • 2 tablespoons extra virgin olive oil plus more if desired
  • 1 of Zest lemon for bright citrusy notes
  • 1 teaspoon honey for a subtle touch of sweetness
  • 2 tablespoons finely chopped fresh mint leaves
  • 2 tablespoons chopped flat-leaf parsley fresh
  • 1 teaspoon Aleppo-style pepper flakes or crushed red chili flakes to taste
  • 1/4 teaspoon ground sumac for a tangy lift
  • 2–3 tablespoons lightly toasted pine nuts optional
  • 1–2 tablespoons coarsely crushed pistachios optional, omit if using pine nuts only

Method

Step 1: Prepare Your Ingredients
  1. First, make sure all your ingredients are ready. Drain the feta cheese and chop your herbs. The freshness of these ingredients can significantly affect the outcome, so try to keep everything as fresh as possible.
Step 2: Blend the Feta and Yogurt
  1. In a food processor, combine the feta cheese and Greek yogurt. Pulse until the mixture is creamy and smooth. This is where the magic begins. The tanginess of feta combines beautifully with the creaminess of yogurt. If the mixture seems too thick, a little splash of olive oil can help.
Step 3: Add Olive Oil and Honey
  1. Next, drizzle in your extra virgin olive oil and add honey. Blend again until everything is well combined. This is the key moment where you’ll want to taste and adjust as needed. If you like a richer flavor, add more olive oil. For sweetness, you can add an extra touch of honey.
Step 4: Incorporate Zest and Herbs
  1. Now, mix in the lemon zest, mint, and parsley. These ingredients create a burst of freshness that elevates the feta to another level. Again, pulse until just combined. You want these herbs to be incorporated, not overly blended to mud.
Step 5: Seasoning
  1. Add in the Aleppo-style pepper flakes and sumac. Blend just until mixed and taste again. You might want to adjust the spice level. Everyone has different preferences, and this is your creation.
Step 6: Garnish and Serve
  1. Transfer the whipped feta to a serving bowl. For that final touch, consider garnishing it with a drizzle of olive oil, toasted pine nuts, and extra herbs. A sprinkle of crushed red peppers over the top can add a pop of color and a hint of heat.

Notes

  • Choose Quality Feta: The better the feta, the better your whipped feta’s flavor. Look for a creamy variety.
  • Greek Yogurt Matters: Use full-fat Greek yogurt for the richest texture. Low-fat or non-fat versions won’t provide the same creaminess.
  • Chill Before Serving: If time allows, chill your whipped feta for at least half an hour. This enhances the flavors as they meld together.
  • Experiment with Add-Ins: Don’t be shy to try different herbs or spices like dill or garlic powder for a unique twist.
  • Store Properly: Keep your whipped feta in an airtight container. It’ll stay fresh for about one week.
