Taco Filling
  • 20 ounces ground turkey 93% lean
  • 1/2 cup finely diced red onion
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon freshly minced garlic
  • Pinch of sea salt, or to taste
  • 1/2 cup smooth tomato purée
  • 1/4 cup plus 2 tablespoons reduced-sodium chicken stock
  • 1 1/2 teaspoons dried Mediterranean oregano
  • 1/2 teaspoon each ground thyme and coriander
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon cayenne pepper
For Serving
  • 8 soft flour tortillas
  • 2 ripe Roma tomatoes, chopped
  • 1/2 English cucumber, diced small
  • 2 cups shredded crisp Romaine lettuce
  • 1/2 cup creamy tzatziki dressing
  • 1/2 cup crumbled feta cheese

Method
 

Step 1: Prepare the Ground Turkey Filling
  1. In a large skillet, heat the olive oil over medium heat. Once it's hot, add the finely diced red onion. Cook for about 3-4 minutes until the onions soften and become fragrant. Next, add the minced garlic and stir it around for about 30 seconds. This releases its aromatic essence.
    Now, raise the heat to medium-high and add the ground turkey. Using a spatula, break the meat apart and brown it evenly. This should take around 5-7 minutes. Season with salt, oregano, thyme, coriander, smoked paprika, and cayenne.
Step 2: Create the Sauce
  1. Once the turkey is cooked through, pour in the tomato purée and chicken stock. Stir until everything is well combined. Then add the lemon juice. Let the mixture simmer for about 5 minutes, allowing the flavors to meld beautifully.
Step 3: Assemble the Tacos
  1. Warm the tortillas in a dry skillet or microwave. This step makes them pliable and easier to work with. Once warmed, layer the turkey filling on each tortilla.
    Top it generously with chopped tomatoes, diced cucumber, shredded Romaine lettuce, creamy tzatziki, and crumbled feta. The colors alone will make your heart sing.
Step 4: Serve and Enjoy
  1. Fold the taco over and take a delicious bite. You may want to consider adding extra tzatziki on the side.
