Every now and then, food transcends the mere act of nourishment. It brings friends together and evokes memories from the past. My first encounter with Costco Street Tacos was an experience I won’t soon forget. Anyone who has ventured into a Costco knows that sampling items is part of the experience. 
On a trip, I stumbled upon their street taco samples, and it was love at first bite. Juicy chicken marinated just right, nestled in a warm corn tortilla. It was a taste of home. With that in mind, I decided to recreate this experience in my kitchen.

Ingredients
  

For the Marinade:
  • 2 pounds boneless, skinless chicken thighs or breasts
  • 2 garlic cloves, minced
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon honey for a touch of sweetness
For the Tortillas:
  • 8 -12 corn tortillas
  • Olive oil spray or canola oil spray
Taco Toppings:
  • Shredded cheese
  • Coleslaw mix or finely shredded cabbage
  • Salsa
  • Cilantro-lime crema
  • 1 tablespoon chopped fresh cilantro for added freshness
  • Diced tomatoes, shredded lettuce, chopped red onions, lime wedges optional

Method
 

Step 1: Prepare the Marinade
  1. Start by whisking together the lime juice, olive oil, minced garlic, and spices in a bowl. The chili powder and smoked paprika create a dynamic flavor profile that sets the stage for the chicken. Don't forget that honey; it not only adds sweetness but helps the chicken caramelize nicely when cooking.
Step 2: Marinate the Chicken
  1. Add the chicken to the marinade and ensure each piece is coated thoroughly. Cover the bowl and refrigerate for at least 30 minutes. For optimal flavor, I suggest marinating for a couple of hours. The longer, the better!
Step 3: Cook the Chicken
  1. Once the chicken is marinated, it’s time to crank up the heat. In a skillet over medium-high heat, add a splash of olive oil. Once heated, add the chicken. Cook for about 6-7 minutes on each side or until the chicken is cooked through and has a nice golden color.
Step 4: Warm the Tortillas
  1. While the chicken is cooking, prepare the tortillas. Spray a pan lightly with oil and warm the corn tortillas over medium heat. Just about 30 seconds per side will do. They should be soft and pliable.
Step 5: Assemble the Tacos
  1. Once the chicken is ready, take it off the heat and let it rest for a few minutes. After resting, chop it into bite-sized pieces. Now comes the fun part! Layer the chicken in the warm tortillas. Top it with cheese, coleslaw mix, salsa, and any other toppings you desire.
Step 6: Serve and Enjoy
  1. Serve your tacos with lime wedges on the side for that fresh zing. Trust me, squeezing lime over your tacos enhances all the flavors. Dig in and enjoy your crowd-pleasing dish!
