Ingredients
  

  • 3/4 cup cranberry, blood orange, or pomegranate juice
  • Fresh rosemary sprigs
  • 1/2 teaspoon orange zest
  • 1 bottle sparkling champagne or sparkling wine 750 mL
  • Sugared cranberries

Method
 

Step 1: Prepare Sugared Cranberries
  1. To make sugared cranberries, follow these steps:
    • In a small saucepan, combine 1/3 cup of water and 1 1/2 cups of granulated sugar. Bring it to a simmer until the sugar fully dissolves.

    • Add 4 ounces of fresh cranberries. Cook for about 1-2 minutes until the cranberries start to pop.

    • Remove them and let them cool on a plate. Once they’re cool, roll the cranberries in 1/4 cup of sugar until well-coated.

     
Step 2: Prepare the Mimosas
  1. Now, for the main event:
    • In a champagne flute, pour 3/4 cup of your chosen juice. Try to fill the glass about halfway.

    • Top it off with sparkling champagne. The ratio doesn’t have to be perfect, but a 1:2 juice to champagne ratio usually works great.

    • Gently stir to mix, but don't overdo it! You want to keep the bubbles intact.

    • For a finishing touch, add a few sugared cranberries and a sprig of fresh rosemary for garnish.
