  • 1 cup + 2 tablespoons fresh apple juice or 1/3 cup brandy mixed with 2/3 cup apple juice
  • 300g sweet raisins
  • 180g soft dates, diced finely to 5mm
  • 150g dried apricots, diced into 8mm pieces
  • 150g glacé cherries, halved or roughly chopped to 8mm
  • 75g mixed citrus peel, chopped into 5mm bits
  • 1 teaspoon orange zest for extra freshness
Cake:
  • 1 1/2 cups packed dark brown sugar
  • 8 tablespoons unsalted butter, softened to room temperature
  • 3 tablespoons rich molasses or golden syrup
  • 1/2 cup light vegetable oil canola, peanut, or grapeseed oil
  • 3 large eggs, preferably at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon warm ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 1/2 teaspoon baking powder
  • 1 2/3 cups plain all-purpose flour
  • 3/4 cup chopped walnuts

  • 250g "ready-to-roll" marzipan
