Method
Step 1: Preheat Your Oven
- First thing’s first, preheat your oven to 350°F (175°C). This ensures that your cookies bake evenly and come out just right.
Step 2: Cream the Butter and Sugar
- In a mixing bowl, beat together the softened butter and dark brown sugar until the mixture is light and fluffy. This should take about 3-5 minutes. Aerating the mixture makes for soft cookies!
Step 3: Mix in the Wet Ingredients
- Once fluffy, add in the egg, vanilla extract, and melted bittersweet chocolate. Mix until everything is well combined. The chocolate gives that decadent taste and aroma that’s hard to resist!
Step 4: Combine the Dry Ingredients
- In another bowl, whisk together flour, cocoa powder, cinnamon, baking soda, and sea salt. This step ensures the dry ingredients blend evenly.
Step 5: Combine Both Mixtures
- Gradually add the dry mixture to the wet ingredients. Stir gently. The goal here is to combine everything without overmixing which could lead to tougher cookies.
Step 6: Add the Good Stuff
- Toss in the rolled oats, ground flaxseed, nutritional yeast, and your choice of chocolate chips or M&Ms. Fold them in until just incorporated.
Step 7: Scoop and Bake
- Using a cookie scoop or spoon, drop dollops of dough onto a lined baking sheet. Space them out a little, as they will spread during baking. Bake for about 10-12 minutes, until the edges are set.
Step 8: Cool and Enjoy
- Once out of the oven, allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack. Enjoy these warm for the ultimate chocolate experience!
