Ingredients

  • 1 cup dark brown sugar
  • 1/4 tsp sea salt
  • 1 tbsp pure vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp cinnamon
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 2 oz bittersweet chocolate melted
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1 cup milk chocolate chips or rainbow-colored M&Ms
  • 1 1/2 cups rolled oats old-fashioned
  • 1 tbsp ground flaxseed
  • 1/4 cup nutritional yeast

Method

Step 1: Preheat Your Oven
  1. First thing’s first, preheat your oven to 350°F (175°C). This ensures that your cookies bake evenly and come out just right.
Step 2: Cream the Butter and Sugar
  1. In a mixing bowl, beat together the softened butter and dark brown sugar until the mixture is light and fluffy. This should take about 3-5 minutes. Aerating the mixture makes for soft cookies!
Step 3: Mix in the Wet Ingredients
  1. Once fluffy, add in the egg, vanilla extract, and melted bittersweet chocolate. Mix until everything is well combined. The chocolate gives that decadent taste and aroma that’s hard to resist!
Step 4: Combine the Dry Ingredients
  1. In another bowl, whisk together flour, cocoa powder, cinnamon, baking soda, and sea salt. This step ensures the dry ingredients blend evenly.
Step 5: Combine Both Mixtures
  1. Gradually add the dry mixture to the wet ingredients. Stir gently. The goal here is to combine everything without overmixing which could lead to tougher cookies.
Step 6: Add the Good Stuff
  1. Toss in the rolled oats, ground flaxseed, nutritional yeast, and your choice of chocolate chips or M&Ms. Fold them in until just incorporated.
Step 7: Scoop and Bake
  1. Using a cookie scoop or spoon, drop dollops of dough onto a lined baking sheet. Space them out a little, as they will spread during baking. Bake for about 10-12 minutes, until the edges are set.
Step 8: Cool and Enjoy
  1. Once out of the oven, allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack. Enjoy these warm for the ultimate chocolate experience!

Notes

  • Use Fresh Ingredients
Ensure your ingredients, especially the baking soda, are fresh. Old baking soda can affect how well your cookies rise.
  • Substitution for Gluten-Free
Use a gluten-free all-purpose flour blend if needed. Just make sure it contains a binding agent like xanthan gum.
  • Chill Dough for Improved Flavor
Chilling the cookie dough for at least 30 minutes before baking can enhance the flavors. This step can take the cookies to the next level!
  • Experiment with Mix-Ins
Don’t hesitate to customize your cookies. Chopped nuts, dried fruit, or coconut can make delightful additions.
  • Store in an Airtight Container
To keep cookies fresh, store them in an airtight container at room temperature. This will help retain their soft texture.
