Ingredients
  

  • 6 to 8 cups chopped fresh broccoli florets

  • 1/2 cup fresh mozzarella cheese, shredded from a block
  • 6 strips smoked bacon
  • 1/4 cup raw honey
  • 1/4 cup organic apple cider vinegar
  • 2/3 cup creamy mayonnaise
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon sea salt
  • 1/3 teaspoon freshly ground black pepper
  • 2 tablespoons finely chopped fresh chives

Method
 

Step 1: Prep the Broccoli
  1. Start by washing the broccoli thoroughly. Then, chop the broccoli florets into bite-sized pieces. This ensures that they mix well with the other ingredients. 
    Use a sharp knife for this task; it’s safer and quicker!
Step 2: Cook the Bacon
  1. Cook the bacon until it’s crispy. I prefer using a cast-iron skillet; it distributes heat evenly. Once cooked, set it aside on paper towels to drain. 
    After it cools, crumble it into small pieces. The crispy bits are perfect for crunchy satisfaction.
Step 3: Grate the Cheese
  1. Next up, take your blocks of cheddar and mozzarella. Grating it yourself not only tastes better but also allows for superior melting. 
    Use a box grater or food processor to make this process easier.
Step 4: Mix the Dressing
  1. In a medium bowl, combine the raw honey, apple cider vinegar, mayonnaise, Dijon mustard, sea salt, and pepper. Whisk these together until they’re smooth and well-combined. 
    This creamy dressing is what brings everything together.
Step 5: Combine All Ingredients
  1. In a large bowl, add the prepared broccoli, crumbled bacon, and grated cheeses. Pour in your dressing. Using a large spoon or spatula, gently combine all the ingredients until everything is well coated.
Step 6: Chill and Serve
  1. Cover your slaw with plastic wrap and place it in the fridge for at least 30 minutes. This allows all those fantastic flavors to meld together and gives it a refreshing chill. If you serve it too soon, the flavors won't be at their best!
