Ingredients
  

  • 1 lb. 1 boneless catfish fillets, cut into 16 pieces
  • 3/4 cup full-fat buttermilk
  • 1/2 cup fine yellow cornmeal
  • 1/2 cup panko breadcrumbs Japanese-style
  • 2 Tbsp. Creole seasoning such as Slap Ya Mama
  • 3/4 tsp. coarse kosher salt, divided
  • 1/4 tsp. freshly ground black pepper
  • 2 Tbsp. freshly squeezed lime juice from 1 lime
  • 1/4 cup creamy mayonnaise
  • 1/2 tsp. smoked paprika
  • 1/4 tsp. garlic powder
  • 2 cups finely shredded napa or green cabbage from 1 small head
  • 8 small yellow corn tortillas, warmed 6-inch
  • 2 radishes, julienned about 1/4 cup
  • 1 ripe avocado, thinly sliced
  • 2 Tbsp. fresh cilantro leaves
  • 2 Tbsp. chopped fresh chives
  • Lime wedges, for serving
  • Hot sauce, to taste

Method
 

Step 1: Marinate the Catfish
  1. Start by preparing the catfish. Place the cut pieces in a bowl and add buttermilk. Make sure each piece gets well-coated. This will help tenderize the fish and add flavor. Let it marinate for about 30 minutes in the refrigerator. In the meantime, you can get the other ingredients prepped.
Step 2: Combine Dry Ingredients
  1. In a separate bowl, mix the cornmeal, panko breadcrumbs, Creole seasoning, 1/2 tsp. of kosher salt, black pepper, smoked paprika, and garlic powder. This blend will provide the catfish with a delightful crunch and savory taste.
Step 3: Bread the Catfish
  1. Once the catfish has marinated, take it out and let it drain for a moment. Dredge each piece in the dry mixture, pressing it gently to ensure the coating adheres well. You want a good layer of crispy goodness on each piece.
Step 4: Fry the Catfish
  1. Heat a large skillet over medium to high heat. Add oil to the skillet—enough to coat the bottom generously.Fry the catfish pieces in batches for about 3-4 minutes on each side, until they are golden brown. Use a slotted spatula to transfer them to a paper towel-lined plate to absorb any excess oil.
Step 5: Prepare the Sauce
  1. While the catfish cooks, mix the mayonnaise and lime juice in a small bowl. This will create a zesty sauce that adds creaminess and a bright flavor.
Step 6: Assemble the Tacos
  1. Now, it’s taco time! On each warmed corn tortilla, place a generous amount of the fried catfish. Top with shredded cabbage, jalapeños, or whatever extras you prefer. Drizzle with the mayo-lime sauce, add radishes, avocado, chives, and cilantro.
Step 7: Serve
