That night, I decided to whip up a caramelized onion dip. With the right balance of flavors, this dip can be a showstopper at any party or a simple, indulgent snack while binge-watching your favorite series on Netflix. Spoiler alert: it’s absolutely divine!

Ingredients
  

  • 1/2 teaspoon of smoked paprika
  • 1 teaspoon of Dijon mustard
  • 4 tablespoons of unsalted butter
  • 4 medium-sized sweet onions, finely diced
  • A pinch of kosher salt and freshly ground black pepper, to taste
  • 1 cup of full-fat sour cream or plain Greek yogurt
  • 1/2 cup of mayonnaise
  • 1/2 teaspoon of garlic powder
  • A handful of fresh parsley or chives, finely chopped for garnish

Method
 

Step 1: Caramelize the Onions
  1. In a large skillet, melt the butter over medium-low heat. Add the diced sweet onions. Stir them every few minutes to ensure they cook evenly. 
    You’ll want to be patient here! Cook the onions for at least 30 minutes, or until they turn a deep golden brown and become sweet.
Step 2: Add Seasoning
  1. Once your onions look beautifully caramelized, sprinkle in the smoked paprika, salt, and pepper. Stir to combine. The smokiness will enhance the sweet taste of the onions, so be generous but taste as you go.
Step 3: Create the Dip Base
  1. In a separate mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, and garlic powder. Stir them well. This mixture will be the creamy base of your dip.
Step 4: Combine
  1. Once your onions are ready and seasoned, let them cool for a few minutes. Next, fold the caramelized onions into the creamy mixture. Make sure everything is thoroughly combined.
Step 5: Garnish and Serve
  1. Transfer the dip to a serving bowl. Garnish with chopped parsley or chives, which will add a lovely color contrast.
    Serve immediately, or chill in the refrigerator if you prefer it cold. I often find that letting it sit for an hour allows the flavors to meld beautifully.
