But once I took that first bite, I knew I had uncovered a gem. It’s a twist on traditional tacos that packs the same punch without the added carbs. Trust me, you’ll want to make this recipe part of your kitchen repertoire.

Ingredients
  

  • 1 tablespoon dried onion flakes
  • 1/4 cup vegetable broth
  • 1/4 cup low-carb taco seasoning blend
  • 5 cups finely shredded or chopped green cabbage
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon ground cumin
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 pound extra-lean ground beef

Method
 

Step 1: Prepare the Ingredients
  1. Start by gathering all your ingredients. Chop the cabbage finely, if you haven’t done so already. This will ensure it wraps nicely around your filling.
Step 2: Cook the Beef
  1. In a large skillet, heat a splash of oil over medium heat. Add the ground beef. Break it apart with a spatula. Cook until it’s browned. This typically takes about 6-8 minutes.
Step 3: Add Spices
  1. Once the beef is a nice brown color, stir in the onion flakes, smoked paprika, ground cumin, and low-carb taco seasoning. Pour in the vegetable broth to keep things juicy. Allow the mixture to simmer for an additional 5 minutes.
Step 4: Assemble Your Tacos
  1. Now comes the fun part. Lay out your cabbage leaves! You can use them whole or trim them down to make them more manageable. Spoon the beef mixture into each leaf, then top with shredded cheddar cheese.
Step 5: Serve
  1. You can garnish with additional toppings like salsa, guacamole, or diced tomatoes. Then roll them up like burritos, or fold them like traditional tacos.

  • Use Fresh Cabbage: Fresh leaves hold up better than wilted ones. Look for sturdy leaves that can handle the fillings.
  • Mix Up the Fillings: Don’t hesitate to experiment! Try chicken, turkey, or a combination of beans and quinoa for a vegetarian option.
  • Get Creative with Toppings: Try yogurt, hot sauce, or diced avocados to add extra flavors and textures.
  • Keep It Neat: If your cabbage leaves are tearing, briefly blanch them in boiling water to soften. This helps them bend without breaking.
