Step 1: Cook the Bacon and Vegetables
- Heat a large non-stick skillet over high heat. Once hot, toss in the chopped bacon. Let it sizzle away for a minute or so before adding diced bell peppers, onions, and jalapeño. Cook for about 4-6 minutes, stirring occasionally, until the bacon is crispy and the vegetables have softened. The combination of flavors from the sizzling bacon and veggies is irresistible! Transfer this mixture to a bowl and set it aside.
Step 2: Prepare the Eggs
- In a large mixing bowl, whisk the eggs together with the half & half and salt. This will give your scrambled eggs that creamy texture everyone loves. Also, if you want an extra pop of flavor, feel free to add a pinch of black pepper or even a dash of hot sauce! Wipe down your skillet and put it back on the heat. Add a tablespoon of olive oil or butter into the pan and let it heat for about a minute.
Step 3: Scramble the Eggs
- Pour your egg mixture into the preheated skillet. Add half of the shredded cheese to the pan. Cook the eggs, stirring frequently for around 2-3 minutes, or until just set but still soft. Remember, the eggs will continue to cook a bit more after you take them off the heat, so don’t let them get too firm! Transfer the scrambled eggs to a separate bowl.
Step 4: Assemble the Wraps
- Now comes the fun part! Lay each tortilla on a clean, flat surface. Spoon some of the scrambled eggs into each tortilla, followed by a generous scoop of the bacon and veggie mixture, and sprinkle with the remaining cheese. You can also add fresh cilantro or sliced avocado at this point if you'd like!
Step 5: Roll and Toast the Wraps
- Fold the tortillas into a burrito shape by bringing in the sides and rolling from the bottom up to the top. Press firmly to keep them intact. Wipe the skillet again, using a teaspoon of olive oil or butter. Place the wraps seam-side down in the skillet and toast for 1-2 minutes per side until beautifully golden and crispy. Keep an eye on them, as they can brown quickly!
Step 6: Serve and Enjoy
- Once toasted, remove the breakfast wraps from the pan. Slice them in half and serve them warm with your favorite salsa or a dollop of sour cream. If you’re feeling a bit more adventurous, a sprinkling of hot sauce can take these wraps to another level.
