  • 4 4-5 - strips of bacon, chopped
  • 1 - cup diced bell peppers
  • 1/4 - cup diced onion
  • 1 - small jalapeño, seeds removed, rinsed, and chopped optional
  • 1 - tablespoon olive oil
  • 1 - cup shredded mozzarella or cheddar cheese
  • 6 - large eggs
  • 2 - tablespoons half & half or you can use any milk
  • 1 - teaspoon salt
  • 6 - medium flour tortillas or 4 large ones
  • - Oil or butter for cooking
  • - Optional: Fresh cilantro, chopped, for garnish
  • - Optional: Sliced avocado, to serve

Method
 

Step 1: Cook the Bacon and Vegetables
  1. Heat a large non-stick skillet over high heat. Once hot, toss in the chopped bacon. Let it sizzle away for a minute or so before adding diced bell peppers, onions, and jalapeño. Cook for about 4-6 minutes, stirring occasionally, until the bacon is crispy and the vegetables have softened. The combination of flavors from the sizzling bacon and veggies is irresistible! Transfer this mixture to a bowl and set it aside.
Step 2: Prepare the Eggs
  1. In a large mixing bowl, whisk the eggs together with the half & half and salt. This will give your scrambled eggs that creamy texture everyone loves. Also, if you want an extra pop of flavor, feel free to add a pinch of black pepper or even a dash of hot sauce! Wipe down your skillet and put it back on the heat. Add a tablespoon of olive oil or butter into the pan and let it heat for about a minute.
Step 3: Scramble the Eggs
  1. Pour your egg mixture into the preheated skillet. Add half of the shredded cheese to the pan. Cook the eggs, stirring frequently for around 2-3 minutes, or until just set but still soft. Step 4: Assemble the Wraps

Step 5: Roll and Toast the Wraps
  1. Fold the tortillas into a burrito shape by bringing in the sides and rolling from the bottom up to the top. Press firmly to keep them intact. Wipe the skillet again, using a teaspoon of olive oil or butter. Place the wraps seam-side down in the skillet and toast for 1-2 minutes per side until beautifully golden and crispy. Keep an eye on them, as they can brown quickly!
Step 6: Serve and Enjoy
  1. Once toasted, remove the breakfast wraps from the pan. Slice them in half and serve them warm with your favorite salsa or a dollop of sour cream. If you’re feeling a bit more adventurous, a sprinkling of hot sauce can take these wraps to another level.
