Step 1: Prepare the Chicken
- Start by patting the chicken dry with paper towels. This helps to achieve that golden, crispy skin we all love. Next, rub the outside of the chicken with olive oil, making sure to get into all the nooks and crannies.
Step 2: Season the Chicken
- In a bowl, combine the salt, pepper, garlic powder, smoked paprika, thyme, chipotle chili powder, and brown sugar. Mix until well combined. Rub this spice mixture generously over the chicken, getting under the skin wherever possible.
Step 3: Prepare the Beer Can
- Open the can of beer and drink or pour out about half of it (you've earned that half!). Add the lime zest and juice to the beer can for extra flavor. You can also mix some additional spices into the beer for an enhanced taste.
Step 4: Insert the Chicken onto the Beer Can
- Carefully place the chicken onto the beer can, ensuring it fits snugly. The can acts as a stand, keeping the chicken upright while it cooks.
Step 5: Heat the Grill
- Preheat your grill to a medium-high setting. Then, carefully place the chicken, still on the beer can, onto the grill. Close the lid.
Step 6: Cook the Chicken
- Cook for about 1 hour, or until the internal temperature reaches 165°F (75°C). To ensure even cooking, occasionally turn the chicken a quarter turn every 20 minutes.
Step 7: Rest and Serve
- Once cooked, carefully remove the chicken from the grill. Let it rest for at least 10 minutes before carefully removing the beer can. Then carve it up and enjoy!

- Dry Brining: Consider seasoning the chicken a few hours in advance. This allows the salt to penetrate deep into the meat.
- Temperature Check: Use a reliable meat thermometer to ensure your chicken is cooked perfectly. It's the best tool for avoiding dry meat.
- Beer Choices: Don’t limit yourself to lager! Try different types of beer to find what enhances the flavor for you. IPA or even citrusy wheat beers can add unique notes.
- Experiment with Herbs: Fresh herbs like rosemary or parsley can elevate the flavor even more. Toss a few sprigs inside the chicken cavity for aromatic goodness.
- Safety First: Be careful when handling the hot beer can; it can be quite hot! Consider using tongs or a grill mitt.
