Ingredients
  

  • 1 can of refried beans, or 1 ½ cups of homemade refried beans 14 oz
  • 12 small tortillas choose either wheat or corn
  • 1/2 cup of zesty salsa
  • 1/2 cup shredded sharp cheddar or Monterey Jack cheese
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup finely chopped white onion
  • 1/2 teaspoon smoky paprika
  • 1/2 teaspoon dried Mexican oregano
  • 1/4 teaspoon ground chili powder
  • Salt, to taste
  • 1 tablespoon of lime juice
  • 1 teaspoon of cumin
For serving:
  • mashed avocado, tangy sour cream, fresh salsa, and a sprinkle of cilantro

Method
 

Step 1: Prepare the Ingredients
  1. Start by gathering all your ingredients on the counter. Chop your onion and measure out the spices and other components. The more prep work you do upfront, the smoother your cooking process will be.
Step 2: Heat the Oil
  1. In a large skillet, heat the 2 tablespoons of olive oil over medium heat. It shouldn’t be smoking; just hot enough to sizzle when you drop the onions in.
Step 3: Sauté the Onions
  1. Once the oil is ready, add the finely chopped onion. Sauté them for about 3-4 minutes, until they are soft and translucent. This step adds depth to your dish and complements the beans.
Step 4: Add the Beans and Spices
  1. Now, mix in your refried beans. Use a spoon to break them apart. Add the smoky paprika, dried Mexican oregano, ground chili powder, cumin, and salt to taste. Stir thoroughly to combine, letting the flavors mingle for about 3-5 minutes.
Step 5: Pour in the Salsa
  1. Pour in the ½ cup of zesty salsa to your bean mixture, and stir again. Allow this to cook for another 2-3 minutes. The salsa adds moisture and a bright flavor, which is absolutely key.
Step 6: Melt the Cheese
  1. Sprinkle your shredded cheese on top of the bean mixture. Cover the skillet with a lid for 2-3 minutes, allowing the heat to melt the cheese while you prepare the tortillas.
Step 7: Warm the Tortillas
  1. In a separate pan, warm your tortillas one by one for about 15-30 seconds on each side. This makes them pliable and enhances their flavor.
Step 8: Assemble the Tacos
  1. Now for the fun part! Take a warmed tortilla, spoon some of that cheesy bean filling into the center, fold it over, and Voilà! You have yourself a delicious taco.
