Ingredients
  

  • 10 hard taco shells we used Old El Paso Stand 'N Stuff
  • 1 tablespoon extra virgin olive oil
  • 2 cups shredded Mexican cheese blend
  • 8 ounces refried beans ½ can
  • 1/2 pound shredded rotisserie chicken
  • 1/2 cup chopped onion
  • 14.5 ounces diced tomatoes, fully drained 1 can
  • 4.5 ounces diced green chiles, fully drained 1 can
  • 1 ounce taco spice mix click for recipe!
Optional Toppings
  • Sliced fresh jalapeños
  • Creamy sour cream
  • Salsa of your choice
  • Shredded romaine lettuce
  • Chopped fresh cilantro
  • 1 teaspoon lime juice for brightness
  • 1/2 teaspoon cumin for added depth of flavor

Method
 

Step 1: Preheat Your Oven
  1. Start by preheating your oven to 375°F (190°C). This step ensures your tacos bake perfectly.
Step 2: Prepare the Filling
  1. In a mixing bowl, combine the shredded chicken, drained diced tomatoes, diced green chiles, chopped onions, and taco spice mix. Make sure everything is well incorporated. Got all that? Great!
Step 3: Assemble the Tacos
  1. Now for the fun part! Carefully place the taco shells in a baking dish. Spoon refried beans into the bottom of each shell. Then, generously fill them with the chicken mixture. Top them with the shredded cheese—don’t be shy!
Step 4: Bake
  1. Pop the baking dish into the preheated oven. Bake for about 15-20 minutes, or until the cheese is bubbly and golden. Your kitchen will smell amazing.
