Method
Step 1: Prepare the Chicken
- Begin by placing the chicken breasts on a clean cutting board. Use a sharp knife to slice a pocket into the side of each breast, making sure not to cut all the way through. This is where the magic will happen!
Step 2: Season the Chicken
- Once your chicken is prepped, drizzle olive oil on both sides. Gently rub the oil to coat the chicken fully. In a small bowl, mix the paprika, half a teaspoon of salt, garlic powder, and onion powder. Sprinkle this seasoning blend all over the chicken, ensuring an even coat for maximized flavor.
Step 3: Make the Filling
- In a medium mixing bowl, combine softened cream cheese, grated Parmesan, mayonnaise, chopped spinach, minced garlic, sun-dried tomatoes, red pepper flakes, and the remaining half teaspoon of salt and black pepper. Stir until you have a well-blended mixture that will be easy to stuff inside the chicken.
Step 4: Stuff the Chicken
- Stuff each chicken breast with the creamy filling mixture. Be generous but don’t overstuff them, or you may have trouble sealing the pockets!
Step 5: Air Fry the Chicken
- Place the stuffed chicken breasts into a greased air fryer basket in a single layer. Don’t overcrowd the basket; you may need to do this in batches if you're cooking for a crowd. Air fry the chicken at 375 degrees Fahrenheit for about 15-20 minutes. You know it’s done when the internal temperature reaches 165 degrees Fahrenheit in the thickest part of the chicken.
Notes
- Choosing Chicken: Look for chicken breasts of similar size to ensure even cooking.
- Cooking Time: Cooking time may vary based on the thickness of your chicken, so always check with a meat thermometer.
- Add Spices: Get creative! Feel free to add your favorite herbs like Italian seasoning for a different kick.
- Experiment with Fillings: Other options like mushrooms or different cheeses can work just as beautifully.
- Prepping Ahead: Stuff the chicken and store in the refrigerator for a few hours for flavors to meld before cooking.
