Ingredients
  

  • 3 pounds pork butt or shoulder, diced
  • 1 tablespoon toasted sesame oil
  • 8 cloves garlic, peeled
  • 1 small onion, chopped
  • 1 tablespoon shawarma seasoning see recipe
  • 2 teaspoons dried oregano
  • 2 teaspoons salt
  • 16 corn tortillas
  • 4 dried California chiles
  • 3 dried New Mexico chiles
  • 2 dried Guajillo chiles
  • 2 dried Hatch chiles
  • 1 dried Chipotle pepper
  • 5 dried Arbol chiles
  • 2 cups boiling water
  • 3 tablespoons red wine vinegar or substitute with apple cider vinegar
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika for a smoky flavor
  • 1 tablespoon lime juice for added brightness

Method
 

Step 1: Prepare the Marinade
  1. Start by rehydrating the dried chiles. Place them in a bowl, pour over the boiling water, and let them soak for about 15 minutes. Once softened, remove the stems and seeds, and toss them into a blender.
Step 2: Blend It Up
  1. Add the garlic, onion, red wine vinegar, salt, cumin, coriander, smoked paprika, and lime juice to the blender. Blend until smooth to create your marinade.
Step 3: Marinate the Pork
  1. In a large bowl, combine the diced pork with your freshly blended marinade. Make sure every piece of meat is coated. Cover and let it marinate in the fridge for at least an hour, but ideally overnight. The longer it marinates, the more flavorful it gets!
Step 4: Cook the Pork
  1. Heat the toasted sesame oil in a large pot or Dutch oven over medium heat. Add your marinated pork and cook until browned, about 10–12 minutes. Pour in any remaining marinade, cover, and let it simmer for roughly 45 minutes to an hour. You want the pork to be tender and juicy.
Step 5: Prepare the Tortillas
  1. While the pork cooks, warm your corn tortillas on a skillet or grill for a minute on each side. A lightly toasted tortilla makes all the difference!
Step 6: Assemble the Tacos
  1. Once your pork is done, it's time to build those tacos. Use two tortillas per taco for extra durability. Divide the pork evenly among the tortillas. Add your favorite toppings—cilantro, onions, salsa, or even avocado!
Step 7: Serve and Enjoy!
  1. Plate up your tacos and serve them immediately with lime wedges on the side for that extra zing. Now, gather your family or friends and enjoy each bite together.
